Beef Barley Soup: The Best Comfort Food You'll Ever Taste
Ingredients
- Beef2 lb
- Olive oil3 tbsp
- Onion1
- Celery2
- Carrot4
- Garlic3 cloves
- Red wine¾ cups
- Beef broth6 cups
- Worcestershire sauce1 tbsp
- Thyme3 sprigs
- Uncooked pearled barley1 cup
- Salt
- Black pepper
- Parsley · minced¼ cups
- Pearl barley1 cup
Instructions
- Heat a large heavy pot over medium heat and add the olive oil.
- Pat the beef dry and season all sides with salt and pepper. Sear in batches until well browned on all sides, without crowding the pot.
- Set the beef aside. Add the onion, celery and carrots to the pot and sauté for 5 minutes, then add the garlic and cook for 1 more minute.
- Add the red wine, raise the heat to high and reduce by half (about 2 minutes), scraping the bottom of the pot to lift the browned bits.
- Return the beef to the pot with the beef broth, Worcestershire sauce and thyme. Bring to a boil, then reduce to a simmer and cook for 45 minutes with the lid partly covered.
- Add the barley and simmer until tender, about 45 to 60 minutes, tasting as you go.
- Season with salt and pepper to taste. If the soup is too thick, thin it with water or extra low-sodium beef broth. Stir in the parsley before serving.
