Instructions

  1. Rinse the rice several times, drain it, then soak it in cold water for 30 minutes.
  2. Stir the chicken bouillon powder and soy sauce into the 2 cups of water and set aside.
  3. Cut the beef into bite-sized pieces, add the marinade ingredients and rub gently to coat. Set aside.
  4. Finely chop the garlic, dice the onion, slice the white and green parts of the green onions separately, slice the shiitake thinly and quarter the button mushrooms.
  5. Heat 2 tbsp oil in a large nonstick pot over medium-high heat. Sear the beef in a single layer for 1 to 2 minutes until the bottom is golden, then flip and stir-fry 2 more minutes. Remove the beef.
  6. In the same pot over medium-high heat, add 1 tbsp oil. Sauté the garlic, onion and white green onion parts for 1 minute until fragrant.
  7. Add the mushrooms and stir-fry for 3 minutes. Add the drained rice and stir-fry for 1 minute so every grain is coated in oil.
  8. Pour in the seasoned water and bring to a boil, stirring now and then so nothing sticks to the bottom.
  9. Once boiling, lower the heat to low. Place the beef on top of the rice, cover and simmer for 15 minutes.
  10. Turn off the heat, keep the lid on and let it steam for 10 more minutes.
  11. Add the green parts of the green onions and a pat of butter, then gently fluff and mix everything together. Serve with kimchi.
