Beef Chow Mein
Ingredientes
- Noodle200 g
- Canola oil1 ½ colher de sopa
- Garlic2
- Ground beef200 g
- Scallion3
- Egg1
- Cabbage2 xícaras
- Carrot1
- Bean sprout1 xícara
- Molho shoyu1 ½ colher de sopa
- Dark soy sauce1 ½ colher de chá
- Oyster sauce1 ½ colher de sopa
- Vinho de Shaoxing1 ½ colher de sopa
- Sugar1 ½ colher de chá
- White pepper
- Cornstarch1 ½ colher de chá
Modo de preparo
- Mix the sauce ingredients in a small bowl and set aside. Part of it flavours the beef; the rest goes on the noodles.
- Mix the cornflour and water in a separate small bowl to make a slurry.
- Cook the noodles according to the packet directions, then drain.
- Heat the oil in a large non-stick pan over high heat. Cook the garlic for 10 seconds, add the beef and cook until no pink remains. Add 1½ tbsp of the sauce and the white parts of the green onions, then cook for 2 more minutes until the beef is nicely caramelised.
- Stir the cornflour slurry into the remaining sauce.
- Add the egg to the pan and mix it through the beef so it scrambles.
- When the egg is mostly cooked, add the carrot and cabbage and cook for 1 minute until the cabbage starts to wilt.
- Give the sauce a quick stir, then add the bean sprouts, noodles and sauce to the pan. Toss well for 1 minute until the sauce coats the noodles. Add the green parts of the green onions and toss for another minute.
- Divide between bowls and serve.
