- Beef2.2 lb
- Butter3 tbsp
- Extra virgin olive oil
- Garlic1 clove
- Sage
- Rosemary
- Salt1 tsp
- Black pepper1 tsp
- Olive · pitted1 ⅔ cups
- Pistachio
- Grana padano hard cheese3 ½ oz
- Red onion1
- Red wine5.1 oz
- Dijon mustard1 tsp
Instructions
- Put the pitted olives and pistachios on the board and chop them coarsely with a smooth-bladed knife.
- Gather the mixture in a bowl, add the grated Grana Padano and mix evenly. Set aside.
- Peel the red onion and slice it to 1/8 inch (about 3 mm) thick.
- Sprinkle salt and pepper on the work surface, place the beef fillet on it and turn it, massaging the meat so the seasoning penetrates.
- Melt the butter in a pan over the heat and flavour it with sage, rosemary and a garlic clove.
- Add the olive oil. When the pan is hot, add the fillet.
- Sear at medium-high heat for about 3 minutes per side.
- Baste the surface occasionally to keep the meat moist.
- When the fillet is fully cooked, discard the herbs and garlic and place the meat on a rack set over a tray.
- Spread the olive and pistachio mixture over the top and press it firmly onto the meat.
- Bake at 430°F in a preheated static oven for about 12 minutes.
- Meanwhile, deglaze the pan with a splash of water if needed, add the onions and red wine, and cook at medium heat for about 8 minutes.
- Stir occasionally and, when the liquid has reduced by half, add the mustard and stir for a few more moments before turning off the heat.
- Blend the mixture until smooth.
- Let the fillet cool slightly, then slice and serve with the sauce.
