Instructions

  1. Separate the napa cabbage stems from the leaves. Cut each stem off with two angled cuts, tear the leaves into bite-sized pieces, and slice the stems across the grain into 1/4-inch pieces.
  2. Snap off the stem ends of the snow peas and pull off the strings. Halve the sweet peppers, remove seeds and core, and slice into 1/2-inch strips.
  3. Cut the green onions into 2-inch pieces, keeping whites and greens separate. Peel and roughly mince the garlic.
  4. Peel the carrot, cut off one side for a flat base, slice thinly, then cut into very thin strips.
  5. Cut the beef across the grain into 1/8-inch slices, angling the knife for wider slices. Trim away gristle. Partly freezing the beef makes cutting easier.
  6. Put the beef in a bowl, cover with cold water to soften and rinse, then drain. Squeeze out excess water.
  7. In a medium bowl, mix 1 tbsp light soy sauce, 1 tbsp oyster sauce, 1/4 tsp white pepper, 2 tbsp cornstarch, 1/2 tsp sugar and 2 tbsp water. Add the beef and mix until the marinade is absorbed.
  8. For the sauce, mix 1.5 tbsp light soy sauce, 2 tbsp oyster sauce, 1 tbsp dark soy sauce, 1/4 tsp white pepper, 1/2 tsp cornstarch, 2 tbsp water and 1 tbsp sugar until no lumps remain.
  9. Bring 8 cups of water to a vigorous boil. Add the lo mein and stir. When the water returns to a boil, reduce to low and cook about 2 minutes, until soft with no white dot in the centre. Drain well without rinsing.
  10. Heat a wok on high. Add 1 tbsp oil to the marinated beef and mix. When the wok begins to smoke, add 1 tbsp...
  11. Stir-fry the beef until about 80% cooked, 20-30 seconds after it starts to firm. Remove and set aside.
  12. Add more oil to the wok and stir-fry the garlic for 15 seconds. Add the cabbage stems for 15-20 seconds, then the leaves and green onion whites for 20-30 seconds, then the carrot strips and cook about 1 minute until softened.
  13. Add the noodles and mix for 30 seconds, separating them with tongs. Stir the sauce, pour it into the wok, add the beef and let the noodles absorb the sauce.
  14. Add the sweet peppers, snow peas and green onion greens. Stir-fry 40-50 seconds, then taste and adjust with light soy sauce. Finish with sesame oil.
