- Soy sauce5 tsp
- Peanut oil2 tbsp
- Rice noodle200 g
- Garlic3
- Onion½
- Bok choy6–8
- Dark soy sauce1 ½ tbsp
- Oyster sauce3 tbsp
- Sugar2 tsp
- White pepper
Instructions
- Put the beef slices in a small bowl, sprinkle with the baking soda and toss with your fingertips to coat and separate the slices. Leave for 20 minutes.
- Rinse the beef in a colander, shake off the water and pat dry lightly with paper towel. Put in a bowl, toss with the soy sauce and set aside.
- Mix the sauce ingredients in a small bowl.
- Prepare the noodles according to the packet directions (usually soaking in boiling water for 5-10 minutes). Drain, then rinse under tap water to remove excess starch.
- Heat the oil over high heat in a large wok or deep frying pan (about 30 cm / 12 inches). Add the onion and stir-fry for 30 seconds. Add the beef and cook until the red is almost gone (about 1 minute), then add the garlic and cook for 30 seconds.
- Add the stem part of the Asian greens and toss for 1 minute. Add the leafy part, then the noodles, then the sauce. Toss for 1½ to 2 minutes until the sauce coats all the noodles and no liquid remains in the pan. Serve immediately.
