- Dark soy sauce2 tbsp
- Hoisin sauce3 tbsp

Instructions
- Make the sauce: in a small jug, mix the cornflour, sesame oil, dark soy sauce, hoisin, rice wine and honey until smooth, then stir in the beef stock and set aside.
- Toss the steak strips with the salt and pepper.
- Heat 3 tbsp oil in a wok or large frying pan over high heat until hot, then add the steak.
- Fry the steak for 2-3 minutes, moving it so the pieces don't stick, until browned.
- Remove the steak to a bowl, leaving the oil in the wok, and lower the heat to medium.
- Add 1 tbsp oil, then the onion wedges, and stir-fry for 2-3 minutes until just softening. Add the mange tout and stir-fry for 1 minute.
- Add the pak choi, garlic and ginger and stir-fry for another minute.
- Pour in the sauce and stir. Let it come to a gentle simmer, adding a splash of water if it's too thick.
- Return the steak to the wok, toss to coat and cook for 2 more minutes to heat through.
- Serve with rice or noodles, topped with spring onions and sesame seeds.
