Ingredients

Instructions

  1. Put the tripe in a pot of boiling water with the bay leaves, oregano, onion and carrot, and let it infuse for at least 20 minutes (longer if the tripe is tough). Let it cool, then cut it into small strips.
  2. Heat the extra virgin olive oil in a medium pot and add the chopped carrot and onion.
  3. When they begin to turn golden, add the guanciale and sprinkle with salt.
  4. Cook until the fat has rendered and the guanciale starts to brown.
  5. Add the tripe strips and a small glass of white wine, and mix well with a wooden spoon.
  6. Sprinkle a generous amount of fine salt over the tripe and stir again.
  7. Cook for about 20 minutes, stirring occasionally, then add the finely chopped tomatoes, bay leaves, oregano, pepper and celery leaves.
  8. If you want extra heat, add a couple of small whole chillies.
