- Soy sauce¾ cups
- Sake¾ cups
- Mirin¾ cups
- Honey½ cups
- Garlic1 bulb
- Ginger · sliced2 oz
- Leek1
- Rice · cooked1 cup
- Egg1
- Scallion · chopped1
Instructions
- Heat a heavy pot over high heat, add the oil, then sear the pork belly skin side down until crispy and golden, a couple of minutes per side.
- Stir the water, soy sauce, sake, mirin and honey in a measuring cup until the honey dissolves.
- Pour off the excess oil and fat from the pot with paper towel, keeping the fat side up.
- Add the garlic, ginger and leek to the pot, pour in the sauce and stir so the pork braises evenly.
- Cover with a lid left slightly open to vent steam. Bring to a hard boil over high heat for 20 minutes, then reduce to medium and simmer for 30 minutes.
- While it simmers, cook the rice, boil the egg and cut the green onion.
- Remove the pork and let it cool slightly before slicing into bite-sized pieces.
- Put the warm rice in a bento box and spoon 3-4 tablespoons of the sauce from the pot over it. Place the pork on the rice, drizzle more sauce on top, add the egg halves to the corner and top with the green onion, patted dry on paper towel.
