Ingredients

Instructions

  1. Cut the bread into 1-inch cubes, about 12 cups. Leave them uncovered at room temperature for a few hours (or up to a day) to dry out; for a shortcut, toast them on a lined baking sheet at 300°F (149°C) for 10 minutes.
  2. Grease a 9×13-inch or 3–4 quart oven-safe dish. Spread half the bread cubes in it.
  3. Beat the room-temperature cream cheese on medium-high speed until smooth. Beat in the confectioners' sugar and 1/4 teaspoon vanilla until combined. Dollop spoonfuls over the bread. Scatter most of the berries over it, add the remaining bread, then top with the reserved berries.
  4. Whisk the eggs, milk, cinnamon, brown sugar and remaining vanilla until combined. Pour evenly over the bread. Cover tightly and refrigerate for at least 3–4 hours, up to 24 hours.
  5. Preheat the oven to 350°F (177°C). Bake uncovered for 45–55 minutes, until golden brown on top (45 minutes gives a softer result). Dust with confectioners' sugar and/or add strawberry topping or maple syrup, and serve warm.
