- Butter150 g
- Flour400 g
- Baking powder2 tsp
- Cinnamon
- Vanilla
- Lemon1
- Sugar60 g + 2
- Mascarpone cheese250 g
Instructions
- Peel the apples, remove the cores, and cut into small cubes.
- Put the apples in a small saucepan and add water to cover them. Boil on medium heat for 10 to 15 minutes, until they just begin to soften.
- Brush the base and sides of a 24cm springform tin with melted butter, then dust with a little flour, rolling the tin so it forms a thin even layer.
- In a large bowl, combine 400g flour, 60g caster sugar, and 2 teaspoons baking powder.
- Add the rind of half or a whole lemon, to taste.
- Break up 150g room-temperature butter into small pieces and add to the bowl. Rub with your hands until the butter begins to bind with the flour.
- Make a well in the middle, add 1 whole egg and 1 egg yolk, then add 1 tablespoon vanilla extract. Beat the eggs in with your fingers, then fold into the mixture.
- Keep mixing with both hands until crumbs form and the mixture comes together into balls of varying sizes to make the crumble topping.
- Preheat the oven to 160 degrees.
