Preparación
- Heat a small non-stick saucepan on medium and add 2 tablespoons of olive oil. Cook the sliced mushrooms for about 3 minutes, then set aside off the heat.
- In a second saucepan on medium heat, cover the capsicum slices with water and cook for 10 minutes, until soft. Drain the water, add 3 tablespoons of olive oil and stir for about 3 minutes.
- Beat the egg in a small bowl and mix in 2 pinches of parmesan.
- Add the egg mixture to the capsicum, stir well with a wooden spoon, then add a sprinkle of dried mixed herbs. Set aside.
- Brush each slice of bread with a tablespoon of olive oil, spreading it with your finger. Sprinkle a little dried herbs on top.
- Cut the provolone to fit a slice of bread and place it on that slice. Spoon the mushrooms over the cheese.
- Place the three bread slices on a pizza tray and bake at 150°C for 5 minutes. Take out the two plain slices and bake the cheese-and-mushroom slice for 2 more minutes.
- Top one plain slice with the grilled zucchini, chopped parsley and a little olive oil. Top the other with the capsicum and egg mixture and chopped parsley.
