BEST Ebi Fry Recipe (Japanese Fried Shrimp)
Ingredients
- Egg1
- Flour40 g
- Shrimp400 g
- Baking soda½ tsp
- Salt¼ tsp
- Panko2 cups
- Vegetable oil
Instructions
- In a bowl, whisk the egg with 2 tablespoons of water until uniform in colour.
- Add 40 grams of all-purpose flour and whisk until smooth and lump-free. Let the batter rest while you prepare the shrimp.
- Clean the 400 grams of shrimp, seasoning them with ½ teaspoon baking soda and ¼ teaspoon salt.
- Preheat a heavy-bottomed pot with two inches of vegetable oil to 340°F (170°C). Line a cooling rack with 3 sheets of paper towels. Spread 2 cups of panko on a tray.
- Dip each shrimp in the batter and let the excess drip off.
- Lay the shrimp on the panko, cover the tops with more panko and press lightly so it sticks. Repeat with the rest.
- Fry without overcrowding until golden brown, flipping partway through for even colour. This took about three minutes for the creator's shrimp; time may vary with size.
- Drain on the prepared rack and let cool for one minute before serving.
