BEST Fudgy Brownies Recipe
Ingredients
- Cherry · dried75 g + 2 tbsp
- Cocoa powder60 g
- Flour96 g
- Baking powder¼ tsp
- Salt¼ tsp
- Butter80 g
- Dark chocolate85 g
- Egg2
- Sugar225 g
- Vanilla1 tsp
- Brown sugar225 g
Instructions
- Line an 8x8-inch pan with parchment, set the oven rack to the center, and preheat to 320°F (160°C).
- Boil the dried cherries, cherry liqueur and water in a small pot, keeping the cherries submerged, until the alcohol smell is gone. Turn off the heat and let the cherries cool to room temperature.
- Sift the cocoa powder, flour, baking powder and salt into a bowl and whisk until evenly combined.
- Microwave the butter and dark chocolate at 300 watts for 1½ minutes, or until the butter is fully melted and the chocolate is partly melted. Do not boil. Whisk until the chocolate is smooth.
- Whisk the eggs into the chocolate mixture until uniform.
- Whisk the sugar and vanilla extract into the chocolate mixture until smooth.
- Fold the chocolate mixture into the flour mixture with the cherries and any leftover liquid from the pot until uniform.
- Spread the batter into the prepared pan and level the top. Bake for 20–25 minutes; less time gives fudgier brownies. They are done when a toothpick in the center comes out with a layer of batter the texture of peanut butter.
- Set the pan on a cooling rack, lift the brownies out using the parchment, and let them cool completely before cutting.
