Best Garlic Noodles Recipe
Ingredients
- Garlic115 g
- Vegetable oil½ cups
- Soy sauce⅓ cups
- Nutritional yeast1 tbsp
- Toasted sesame oil1 tbsp
- Onion powder1 tsp
- Noodle260 g
- Scallion
- Black pepper
Instructions
- Set aside about one clove's worth of minced garlic. Fry the remaining 70 g of garlic in a frying pan with about half of the 1/2 cup vegetable oil over medium-low heat, slowly, until light brown and very fragrant, without burning. Let it cool.
- Put the remaining oil, 45 g black garlic, 1/3 cup soy sauce, 1 tbsp nutritional yeast, 1 tbsp toasted sesame oil and 1 tsp onion powder into a blender or food processor. Add the cooled fried garlic and blend until smooth.
- Boil the 260 g fresh noodles following the package directions. Lift them straight into a bowl with tongs or chopsticks, keeping the cooking water.
- Add a few large spoonfuls of the garlic sauce and a ladleful of the cooking water to the noodles.
- Toss until the water and sauce emulsify and coat the noodles. Taste and add more sauce if needed. If the noodles stick together, add more cooking water.
- Top with chopped scallions and freshly cracked black pepper.
