Ingredients

Instructions

  1. Put the 60 grams of onions in a microwave-safe bowl, cover, and microwave at 800 watts for 4 minutes until soft and just starting to brown. Leave covered and let cool enough to handle.
  2. In a separate bowl, mix the 16 grams panko, 2 tablespoons milk, 2 teaspoons oyster sauce and 1/4 teaspoon black pepper.
  3. When the onions have cooled a little, add them to the panko mixture with the 225 grams ground beef and knead until well combined.
  4. Divide the mixture in half and shape into 2 patties about 3/4 inch (2 cm) thick. Press an indentation into the center of each.
  5. Stir together the 3/4 cup low-salt beef stock, 1 1/2 tablespoons soy sauce, 1/2 teaspoon Worcestershire sauce and 2 teaspoons potato starch to make the gravy mixture.
  6. Heat 2 teaspoons vegetable oil in a frying pan over medium heat until hot. Break in the 2 eggs, then reduce to low and fry until the whites are set and the yolks are cooked to your liking. Transfer to a plate.
  7. In the same pan, raise the heat to medium-high. Fry the patties until a brown crust forms on one side and they are cooked about a third of the way through (about 2 1/2 minutes). Flip and fry until almost cooked through.
  8. Move the patties to a plate. Add the 70 grams button mushrooms and 70 grams onions to the pan and sauté until well browned and caramelized.
  9. Add the 1/2 tablespoon dark rum (optional) and deglaze the pan.
  10. Add the gravy mixture and return the patties to the pan. Boil until the gravy thickens, turning the patties to coat them evenly.
  11. Stir in the 1 tablespoon cream until evenly combined.
  12. Put a mound of hot rice on a plate, top with a patty and cover with gravy. Garnish with fried shallots or onions and place a fried egg on top.
