Best Healthy Soft Seedy Sandwich Bread
Ingredients
- Bread flour2 ¼ cups
- Whole wheat flour1 cup
- Flax seed1 tbsp
- Salt1 ½ tsp
- Mixed seed4 tbsp
- Milk¼ cups
- Oats9 tbsp
- Butter · melted softened3 tbsp
- Honey2 tbsp
- Yeast2 ¼ tsp
- Heavy cream · for brushing2 tbsp
Instructions
- In a large bowl, whisk together the bread flour, white whole wheat flour, flaxseed meal, salt and seeds.
- Warm the water and milk until about 115°F. In a mixer bowl with the paddle, combine the warm liquid with the oats, butter and honey and mix about 30 seconds. Sprinkle the yeast on top and let it sit for 5 minutes.
- Add the dry ingredients and mix with a spoon until just combined, then knead with the dough hook on medium-low for 8-10 minutes. If it sticks to the bowl after a few minutes, add 1-2 tablespoons of flour.
- Cover and let the dough rise in a warm place for about 1½ hours, or until doubled.
- Grease an 8½ x 4½ inch loaf pan (or 8x4 inch) with nonstick spray.
- Pat the dough into an 8x12 inch rectangle on a lightly floured surface, roll it into an 8-inch log, tuck the ends under and pinch the seam closed. Place it in the pan.
- Cover and let it rise 45 minutes to 1 hour, until it sits 1 inch above the pan rim.
- Preheat the oven to 350°F with the rack in the middle.
- Brush the loaf with milk, sprinkle with oats, and bake for 35-40 minutes until golden on top and hollow-sounding when tapped. The centre should read 190°F.
- Rest the bread 5 minutes in the pan, then turn it out onto a wire rack and cool completely before slicing.
