Best Lemon Bars Recipe π
Ingredients
- Flour2 β cups
- Sugar1.92 cups
- Butter1 cup
- SaltΒΌ tsp
- Vanilla1 tsp
- Milk1β2 tsp
- Lemon1 tbsp + 1 cup
- Egg6
Instructions
- Preheat the oven to 350Β°F (180Β°C). Line a 9Γ13-inch (23Γ33 cm) glass or ceramic baking dish with parchment, leaving overhang for lifting.
- In a food processor, pulse the flour, powdered sugar, salt and vanilla. Add the cold cubed butter and pulse until it looks like coarse crumbs. If too dry, add 1β2 teaspoons milk, only until it clumps when pressed.
- Press the dough firmly and evenly into the bottom of the pan, prick all over with a fork, and chill for 30 minutes.
- Bake the crust for 18β24 minutes, or until golden around the edges. Leave the oven on and do not take the crust out.
- While the crust bakes, rub the sugar and lemon zest together in a bowl. Add the flour and whisk. Add the eggs and whisk until smooth, then add the lemon juice. For a very smooth filling, strain through a fine sieve.
- Working quickly, pull the oven rack out slightly and pour the filling onto the hot crust in the oven. Bake for 20β25 minutes, until the centre is just set and no longer jiggles.
- Let the bars cool completely at room temperature, then refrigerate for at least 1 hour before slicing.
- Dust generously with powdered sugar, cut into squares and serve.
