BEST Matcha Crinkle Cookies
Ingredients
- Flour140 g
- Matcha powder15 g
- Baking powder1 tsp
- Salt0.13 tsp
- Egg2
- Sugar244 g
- Butter57 g
Instructions
- Sift together the flour, matcha powder, baking powder and salt through a fine-mesh sieve.
- Beat the eggs and 134 g granulated sugar until pale; a whisk works too.
- Slowly beat in the melted butter until fully combined.
- Add the dry ingredients to the wet and mix until no dry patches remain. The dough should feel like soft frosting.
- Chill the dough for at least 1 hour, until firm enough to scoop.
- Line a baking sheet with parchment. Put 70 g granulated sugar in one bowl and 40 g powdered sugar in another. Set the oven rack to the centre and preheat to 320°F (160°C).
- Scoop golf-ball-sized portions of dough, roll each in the granulated sugar, then shape into a smooth sphere.
- Roll each ball in the powdered sugar until fully white, then place on the prepared sheet.
- Bake until the cookies have flattened slightly and the tops have cracked but the centres still feel soft. The author's convection oven took 11 minutes; check early as times vary.
- Let the cookies cool a few minutes on the sheet, then move them to a rack to cool completely.
