- Orange⅓ cups + ½ tbsp
- Salt½ tsp

- Whisk the orange juice, orange marmalade, orange zest, 1/2 teaspoon potato starch and 1/2 teaspoon salt together in a skillet.
- When ready to cook, heat a heavy pot with 2 inches of vegetable oil to 340°F (170°C). Set a paper towel-lined rack nearby.
- Put 1/2 cup potato starch in a shallow bowl and dip the chicken pieces to coat them evenly, without leaving thick clumps.
- Fry the chicken in batches, turning a few times, until golden brown and cooked through. Drain on the prepared rack and repeat.
- Heat the skillet with the sauce over medium-high heat, stirring constantly until it starts to thicken. Add the fried chicken and toss until coated. The dish is done when the sauce forms a thick glaze on the pieces.
- Garnish with the minced red bell pepper and toasted sesame seeds.
