Best Shrimp Skewers 🍤 (Two Methods)
Ingredients
- Shrimp2 lb
- Garlic3–4 cloves
- Olive oil6 tbsp
- Lemon7 tsp
- Smoked paprika1 tsp
- Oregano · dried1 tsp
- Salt¾ tsp
- Black pepper½ tsp
- Chili flake · flakes½ tsp
- Parsley2 tbsp
Instructions
- Make the marinade first in a large bowl: combine the olive oil, garlic, lemon juice, lemon zest, paprika, oregano, salt, pepper, chili flakes and parsley. Set aside a few tablespoons in a separate bowl for brushing later.
- If using frozen shrimp, thaw completely and pat very dry with paper towels.
- Add the raw shrimp to the large bowl and toss until evenly coated. Marinate for 15–20 minutes.
- Thread the shrimp onto skewers. If you like, add red onion, zucchini or pineapple chunks between the shrimp.
- Grilling: preheat a grill or grill pan to medium-high. Grill the skewers 2–3 minutes per side, until the shrimp turn pink and opaque with light char marks. Take off the grill and brush right away with the reserved marinade.
- Shrimp are done when they form a loose C shape; a tight O shape means overcooked.
- Oven option: preheat the oven to 220°C (425°F). Place the skewers on a parchment-lined baking sheet or wire rack and bake 6–8 minutes, flipping halfway if you like.
- For extra color, broil 1–2 minutes at the end. Remove from the oven and brush right away with the reserved marinade.
- Serve immediately.
