Ingredients

Instructions

  1. Bring a large pot of well-salted water to a boil.
  2. Dissolve the baking soda in 1 tablespoon of water. Add it to a frying pan with the onion, carrot, garlic and olive oil. Stir to combine, cover, and cook over medium heat for 10 minutes.
  3. When steam escapes from under the lid, lower the heat to low and keep steaming until the timer goes off.
  4. Remove the lid, raise the heat to medium-high and saut茅 for about 3 minutes, until the liquid has evaporated and the onions start to brown.
  5. Add the ground beef and ground pork and break up the clumps with a spatula until no large lumps remain.
  6. Add the red wine and keep breaking up the mixture until it no longer smells of alcohol.
  7. Add the tomato puree, ketchup, dried oregano, salt and black pepper. Simmer vigorously, stirring constantly, for about 10 minutes.
  8. Meanwhile, cook the spaghetti in the boiling water for 1 minute less than the package directions, submerging it quickly.
  9. The sauce is ready when a spatula drawn through it leaves a gap that takes a second to fill in.
  10. Transfer the drained spaghetti directly into the sauce pan and stir together, adding a little pasta water if it looks dry.
  11. Serve garnished with chopped flat-leaf parsley and Parmesan to taste.
