Ingredients

Instructions

  1. Put the beef, salt and white or black pepper in a medium bowl and toss to coat.
  2. Heat 1 tablespoon of the olive oil in a wok over medium-high heat for 1 minute. Add the beef in one layer and sear 2-3 minutes on one side, then flip and keep cooking, stirring now and then, until done to your liking. Remove the beef, leaving the rendered fat in the wok.
  3. Pour the beaten eggs into the wok with the fat, let them set, then break them up and scramble. Remove and set aside.
  4. Add the remaining 2 tablespoons of olive oil and heat for 1 minute. Stir in the ginger and garlic for 30 seconds, then add the mixed vegetables and cook about 2 minutes. Add the green onions and stir for 30 seconds.
  5. Add the cooked rice and soy sauce to the wok.
  6. Stir-fry the rice over high heat, mixing it with the soy sauce, until it is hot all the way through.
  7. Return the beef and scrambled eggs to the wok and toss everything together.
  8. Drizzle over the sesame oil, toss to combine, then turn off the heat.
  9. Top with more sliced green onions and serve warm.
