Ingredients
- Beef1
- Salt¼ tsp
- Black pepper¼ tsp
- Garlic1 clove
- Onion1 tbsp
- Mirin2 tbsp
- Soy sauce1 tbsp
Instructions
- Season both sides of the steak with 1/4 teaspoon salt and 1/4 teaspoon black pepper, and let it rest at room temperature for 5 to 10 minutes.
- Thinly slice the garlic clove. Grate half an onion to make 1 tablespoon of onion puree. Heat a cast iron skillet over medium heat until lightly smoking.
- Place the steak in the pan and let some fat render out. Optionally add vegetables such as bell peppers, onions or carrots.
- Flip the steak every 1 1/2 minutes until it reaches 130°F (55°C) for medium-rare; a 3/4-inch steak took about 5 minutes.
- Transfer the steak to a cutting board to rest.
- Return the pan to the heat, and fry the garlic slices in the rendered fat until golden and crisp. Drain on paper towels.
- Add the onion puree to the pan and stir until it begins to caramelize.
- Add 2 tablespoons mirin and 1 tablespoon soy sauce and boil until the sauce is lightly thickened and glossy.
- Slice the beef and serve topped with the sauce, garlic chips and extra cracked black pepper.
