- Egg2
- Garlic · minced1 tbsp
- Ginger · minced1 tsp
- Broccoli113 g
- Carrot · diced85 g
- Radish · diced2–3 tbsp
- Rice · cooked450 g
Instructions
- Dice the beef into 1/3-inch cubes and marinate with soy sauce, dark soy sauce, white pepper and baking soda.
- Cut the Chinese broccoli stems into thin rounds and the leaves into larger pieces so they cook at the same time (use regular broccoli cut to a similar size if needed).
- Beat the two eggs well.
- Mix the seasonings (soy sauce, oyster sauce, satay sauce, white pepper) in a bowl.
- Heat the wok on high until smoking. Add 1.5 tbsp oil and swirl to coat. Pour in the eggs, let them set, then break into small pieces with a spatula. Remove the eggs from the wok.
- Reheat the wok on high and add 1.5 tbsp oil. Stir-fry the beef until nicely charred, then remove it, leaving the oil in the wok.
- On low heat, use the leftover oil to stir-fry the garlic, ginger, preserved radish (if using), carrot and broccoli stems for a few minutes until cooked through.
- Turn the heat to high, add the day-old rice and stir-fry a few minutes until grains start to jump.
- Add the sauce and stir until evenly mixed. Return the egg and beef and add the broccoli leaves; keep mixing until the greens wilt.
- Taste and adjust the seasoning before serving.
