Ingredients
- Milk1 cup
- Sugar1 tbsp
- Cinnamon stick1
- Lemon4
- Egg2
- Baguette1
- Extra virgin olive oil½ cups
- Honey2 tbsp
- Salt
- Mint
Instructions
- Put the milk, sugar, cinnamon stick, lemon peel and a pinch of salt in a saucepan. Heat on high, whisking, and once it reaches a light boil, turn off the heat and let it infuse.
- Cut the baguette into diagonal slices 2 cm (3/4 inch) thick. Crack the eggs into a shallow bowl, season with salt and whisk.
- After the milk has infused for 10 minutes, strain it through a fine sieve into a shallow bowl.
- Heat the olive oil in a large frying pan over medium heat.
- While the oil heats, dip the bread slices in the milk, about 5 to 6 flips, then dip them in the egg, about 3 to 4 flips.
- When the oil is hot, fry the coated slices in a single spaced-out layer, in batches, for 2 to 3 minutes per side or until golden all over. Drain on paper towels.
- Serve some slices on a plate, drizzle lightly with honey and garnish with fresh mint.
