Ingredients
- Extra virgin olive oil7 tbsp
- Onion3
- Garlic6 cloves
- Flour½ cups
- Baking powder½ tsp
- Egg1
- Beer⅓ cups
- Paprika · smoked½ tsp
- Cumin · ground¼ tsp
- Chive · chopped2 tbsp
- Salt
- Black pepper
- Saffron¼ tsp
- Mayonnaise½ cups
- Lemon1 tsp
Instructions
- Heat a large frying pan over medium heat and add 2 tbsp (35 ml) olive oil.
- After a couple of minutes, add the sliced onions and a pinch of salt. Stir, then stir every 2 to 3 minutes so they cook evenly.
- When the onions are lightly caramelized, after about 15 to 20 minutes, add the chopped garlic, stir for 30 seconds, then turn off the heat.
- In a large bowl, whisk the flour and baking powder. Make a well in the middle, crack in the egg and whisk it, then add the beer and whisk until you have a creamy batter.
- Add the sautéed onions, paprika, cumin and chopped chives to the batter. Season with salt and pepper and mix until well combined.
- Heat the same pan over medium heat and add 1/4 cup (60 ml) olive oil.
- After a couple of minutes, drop spoonfuls of batter into the hot oil in a single evenly spaced layer, cooking in batches. Fry for 3 minutes per side or until golden and crispy, then move to a dish lined with paper towels.
- For the aioli, pound the chopped garlic, saffron and a pinch of salt in a mortar with a pestle to a paste. Add the mayonnaise, lemon juice and olive oil, season with salt and pepper, and whisk.
- Put the aioli in a serving dish, arrange the fritters around it, and garnish with chopped chives.
