Ingredients

Instructions

  1. Pat the shrimp dry with paper towels, then season with 1/4 tsp salt, 1 tsp paprika, 1/3 tsp black pepper and a drizzle of vegetable oil. Mix and set aside.
  2. Cut the broccoli into florets. Peel the stems, cut them into quarters and pickle them like cucumbers (optional).
  3. Dice the 8 garlic cloves and the 1/2 tbsp ginger. If using, split a few dried red chilies open (or use chili flakes).
  4. Whisk together 1.5 tsp cornstarch, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tbsp hoisin sauce, 1/2 tsp sugar, 1 tsp dark soy sauce and 1/2 cup water until well mixed.
  5. Heat a wok on high until smoking hot. Add a few tbsp oil and swirl to coat the bottom. Add the shrimp and stir for a couple of minutes, until pink but still slightly translucient inside. Remove them from the wok.
  6. Tilt the wok to leave the oil behind. Turn the heat to medium and add the garlic, ginger, optional chilies and broccoli. Toss for 1 to 2 minutes.
  7. Splash in a little water from the side of the wok, then cover immediately so the broccoli steams through.
  8. Pour in the sauce and return the shrimp to the wok. Toss for a couple of minutes until the sauce thickens.
