- Ginger · minced½ colher de sopa
- Dried chili1
Modo de preparo
- Pat the shrimp dry with paper towels, then season with 1/4 tsp salt, 1 tsp paprika, 1/3 tsp black pepper and a drizzle of vegetable oil. Mix and set aside.
- Cut the broccoli into florets. Peel the stems, cut them into quarters and pickle them like cucumbers (optional).
- Dice the 8 garlic cloves and the 1/2 tbsp ginger. If using, split a few dried red chilies open (or use chili flakes).
- Whisk together 1.5 tsp cornstarch, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tbsp hoisin sauce, 1/2 tsp sugar, 1 tsp dark soy sauce and 1/2 cup water until well mixed.
- Heat a wok on high until smoking hot. Add a few tbsp oil and swirl to coat the bottom. Add the shrimp and stir for a couple of minutes, until pink but still slightly translucient inside. Remove them from the wok.
- Tilt the wok to leave the oil behind. Turn the heat to medium and add the garlic, ginger, optional chilies and broccoli. Toss for 1 to 2 minutes.
- Splash in a little water from the side of the wok, then cover immediately so the broccoli steams through.
- Pour in the sauce and return the shrimp to the wok. Toss for a couple of minutes until the sauce thickens.
