BETTER THAN TAKEOUT - Authentic Pepper Steak Recipe
Ingredients
- Beef1 piece
- Soy sauce1 tbsp
- Dark soy sauce1 ½ tsp
- Cornstarch1 tsp
- Black pepperto taste
- Vegetable oil1 ½ tsp + 1–2 tbsp
- Bell pepper150 g
- Garlic
- Ginger½ inches
- Salt¾ tsp
- Shaoxing wine1 ½ tbsp
- Five spice · powder¼ tsp
Instructions
- Cut the beef into slices about 1/4 inch thick, then cut each slice into strips about 1/4 inch wide. If using a cheaper cut, add 1/4 tsp baking soda to the marinade to tenderize it.
- Marinate the beef with 1 tbsp soy sauce, 1.5 tsp dark soy sauce, black pepper to taste and 1 tsp cornstarch. Add a drizzle of cooking oil to coat the beef.
- Lightly smash the green peppers with a meat tenderizer, then slice them at a 45-degree angle. Use bell pepper instead if you cannot handle heat.
- Thinly slice the 2 garlic cloves and 1/2 inch of ginger.
- Heat the wok on high until smoking hot, then add 1-2 tbsp cooking oil. Separate the beef so the pieces do not clump, then stir-fry for 1-2 minutes until all the beef has changed color. Remove the beef, tilting the wok to leave the oil behind.
- Reduce the heat to medium-low. Add the garlic, ginger and peppers and stir for a few minutes. Add 3/4 tsp salt.
- Once the peppers soften slightly, return the beef to the wok and turn the heat to high. Add a few shakes of five spice powder (1/4 tsp), drizzle 1.5 tbsp Chinese cooking wine down the side of the wok, and stir for 1-2 minutes.
