- Chicken breast12.3 oz
- Salt⅓ tsp
- Baking soda⅓ tsp
- Shaoxing wine1 ½ tbsp
- Black pepperto taste
- Garlic3 cloves
- Ginger½ inches
- Carrot4 oz
- Bell pepper½
- Shiitake mushroom5
- Snap pea5 oz
- Soy sauce1 ½ tbsp
- Dark soy sauce1 tbsp
- Oyster sauce1 tbsp
- Hoisin sauce1 tbsp
- Peanut butter1 tsp
- Scallion5
Instructions
- Slice the chicken breast thinly. Slice a few garlic cloves thinly and julienne some ginger, then add them to the chicken as part of the marinade (or grate the ginger finely if you prefer it milder).
- Season the chicken with 1/3 tsp salt, 1/2 tbsp Chinese cooking wine, black pepper to taste and 1/3 tsp baking soda, sprinkling evenly. Mix well and set aside.
- Prepare the vegetables: carrot, bell pepper, mushrooms, snow peas and scallions, or use a pack of pre-cut mixed vegetables.
- Mix the sauce: 1.5 tbsp soy sauce, 1.5 tbsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp hoisin sauce, 1 tbsp Chinese cooking wine, 1/2 tbsp peanut butter and 1/2 cup water, stirring thoroughly.
- Boil the noodles until 80% cooked, then drain completely without overcooking.
- Heat a wok over high heat until smoking hot. Stir the chicken for 2 minutes or until it just changes colour. Add all the vegetables except the scallions and stir for 1 minute.
- Add the drained noodles and the sauce. Stir over medium heat until all the sauce is absorbed, then turn off the heat immediately to stop the noodles sticking.
- Add the scallions and toss well.
