Ingredients

Instructions

  1. Heat the fish broth in a saucepan over medium heat.
  2. In a large frying pan over medium heat, warm the olive oil. Add the noodles and stir constantly for 3 to 4 minutes until golden. Remove the noodles and set them aside, keeping the oil in the pan.
  3. In the same pan over the same heat, add the chopped garlic and stir constantly for 30 seconds to 1 minute until fragrant. Add the paprika and stir quickly, then add the grated tomatoes and parsley, season with salt and pepper, mix and simmer.
  4. Simmer for 4 to 5 minutes until the grated tomatoes have slightly thickened. Return the fried noodles to the pan, gently pour the hot fish broth over them, mix well and simmer.
  5. Meanwhile, make the aioli: pound the 3 chopped garlic cloves with a pinch of sea salt in a mortar to a paste. Add the egg yolk and lemon juice, then whisk in a circular motion while slowly adding the 1 cup olive oil. Once it is thick like mayonnaise, season with salt and pepper, mix and set aside.
  6. Simmer the noodles for about 8 minutes until all the broth is absorbed. Cover the pan, turn off the heat and let stand for 3 to 4 minutes so the noodles finish cooking through.
  7. Transfer to serving dishes, top with a spoonful of garlic aioli and chopped parsley, and serve at once.
