Instructions
- In a bowl, combine the beef mince, grated and squeezed onion (2 medium), finely chopped garlic (1 tbs), lemon zest (1 tsp), egg (1), crushed red chilli (1 tsp), dried oregano (½ tsp), pink salt (1 tsp or to taste), black pepper powder (1 tsp), cumin powder (1 tsp), paprika (1 & ½ tsp), dried thyme (½ tsp), breadcrumbs (4 tbs) and a handful of chopped parsley, then mix well.
- Cover and refrigerate for 1 hour.
- Uncover. Flatten 80 g of the mixture, place an 8 g mozzarella cube in the centre, and shape into a patty. This makes 10 kebabs.
- Brush a pan with cooking oil (1 tsp) and heat it. Fry the kebabs on medium heat until golden on both sides.
- Wipe out the pan, or use the same pan, and melt the butter (1 tbs). Add the garlic and stir until fragrant. (Note: the text reuses the garlic from the kebab mix; use the 1 tbs listed in the kebab ingredients.)
- Add the boiled potato wedges (2 large), then sprinkle with paprika (1 pinch), pink salt (1 pinch) and chopped parsley (1 tsp). Cook on medium heat for 1 minute.
- Turn the wedges, sprinkle with black pepper powder (1 pinch), paprika (1 pinch) and parsley (1 tsp), then mix and cook on medium heat for 1 to 2 minutes.
- Serve the kebabs with salad and the spicy potato wedges.
