Big Bash Bar One Cake
Ingredients
- Chocolate2 boxes + 6 + 1
- Cream½ cups
- Date1 cup
Instructions
- Preheat the oven and prepare both boxes of chocolate cake mix according to the package instructions.
- Divide the batter between a 23 cm round cake tin and a 26 cm loaf tin.
- Bake as directed. Cool completely on a wire rack, then refrigerate for 1 hour until firm.
- Coarsely chop the Bar-One bars. Heat the cooking cream in a small pot over low heat (or in the microwave) until just warm.
- Remove from the heat, add the chopped chocolate and leave for 5 minutes. Stir slowly until smooth and glossy.
- Set aside to cool to a thick but pourable consistency.
- For the date caramel, blend 1 cup fresh dates with 1 tablespoon water and a pinch of salt until smooth and thick. Transfer to a piping bag and set aside.
- Once firm, cut and shape the cakes into a "6" (see the Foodies of SA video for guidance). Fill any gaps with icing.
- Spread a thin crumb coat of store-bought chocolate icing and refrigerate for 15 minutes.
- Spread a thick, smooth final layer of icing.
- Pour the Bar-One ganache over the top so it drips down the sides.
- Decorate with extra Bar-One pieces and pipe dots of date caramel.
