Ingredients

Instructions

  1. Rinse the rice under cold water until the water runs clear. Put the rice, water and a pinch of salt in a saucepan.
  2. Bring to the boil, then lower the heat to low. Cover tightly and simmer for 25 to 28 minutes.
  3. Take off the heat and keep covered for 5 minutes. Fluff with a fork and set aside.
  4. Heat a large pan over medium-high heat and lightly coat with spray oil. Add the beef mince and cook 1 to 2 minutes until it starts to sizzle, breaking it up with a spatula.
  5. Sprinkle in the garlic powder, onion powder, smoked paprika, salt and black pepper. Cook 6 to 8 minutes, stirring now and then, until browned and fully cooked. Drain any excess fat if needed.
  6. In a bowl, combine the mayonnaise, Greek yogurt, ketchup, mustard, vinegar, diced pickles, smoked paprika and a pinch of salt. Whisk until smooth and creamy, then adjust the seasoning.
  7. Shred the lettuce, halve the cherry tomatoes, and slice the pickles and onion.
  8. Divide the rice evenly between 5 containers. Top each with beef, then lettuce, tomatoes, onion and pickles. Drizzle with the sauce.
