Bite-Through Chicken Thighs (White Sauce Finish)
Ingredients
- Chicken thigh12–14
- Killer Hogs AP Seasoning
- Killer Hogs The BBQ Rub
- Killer Hogs Mississippi White Sauce
- Season
- Light coat of Killer Hogs AP Seasoning on both sides
Instructions
- Trim any large pockets of fat from the thighs, especially along the sides. Square them up so they cook evenly, but leave enough fat to render.
- Coat both sides of the thighs lightly with the AP Seasoning, then add The BBQ Rub for colour and flavour.
- Let the seasoned thighs sit at room temperature while the grill heats up.
- Set the pellet grill to 400°F (200°C). Place the thighs skin-side up and cook for 45 minutes to 1 hour, until the internal temperature is at least 175°F (80°C); aim for around 195°F (90°C) if you prefer.
- Take the thighs straight off the grill, dunk each one fully in the white sauce and let the excess drip off briefly. Serve immediately without resting or returning them to the grill.
