Bitter gourd stir fry recipe | Kakarakaya fry | Pavakkai fry recipe
Ingredients
- Karela250 g
- Oil1 ½–2 tbsp
- Salt¼ tsp
- Garlic1 tbsp
- Jaggery50 g
- Copra3–4 tbsp
- Tamarind1 tbsp
- Curry1 sprig
- Asafoetida1 pinch
- Cumin½ tsp
- Turmeric0.13 tsp
- Chili powder1–1 ½ tsp
- Coriander seed · powder1 tbsp
Instructions
- Soak the tamarind in 1/4 cup of hot water. Squeeze it well, then thin it with another 2 to 4 tablespoons of water. Keep it thin, as a thick paste stops the gourd from cooking properly.
- Wash the bitter gourd, trim the ends and slice thinly. Deseed if you like.
- Heat oil in a pan and add the cumin seeds. When they sizzle, add the garlic and curry leaves and fry for 2 minutes. Then add the asafoetida and turmeric.
- Add the bitter gourd and stir-fry for 3 to 4 minutes. Add salt, then pour the strained tamarind water over the slices and mix well.
- Cover and cook on medium heat until the gourd is tender, stirring now and then to prevent burning.
- Add the coriander powder, red chili powder, coconut and jaggery. Sauté for 3 to 4 minutes, until the jaggery has dissolved and the moisture has evaporated.
- Taste and adjust the salt, spices and tamarind. Keep cooking until no excess moisture remains.
- Serve with rice, dal, rasam and ghee.
