Ingredients

Instructions

  1. Preheat the oven to 200°C (400°F, gas mark 6).
  2. Peel one onion and put it in a food processor with the mushrooms, rye bread and 1 teaspoon of ground coriander. Blend until fine.
  3. Drain the black beans and pulse them into the mixture. Season lightly with sea salt and black pepper, then divide into 4 and shape into patties about 2.5 cm thick.
  4. Rub the patties with oil, dust with ground coriander, and place on an oiled baking tray. Roast for 25 minutes, until dark and crispy, topping with the Cheddar and warming the rolls for the last few minutes.
  5. Meanwhile, finely chop the remaining onion and the tomatoes, and put them in a bowl. Squeeze in the lime juice, add a few shakes of Tabasco and season to taste.
  6. Destone, peel and finely slice the mango and avocado.
  7. Halve the warm rolls and spread the yoghurt over the bases, then add half the salsa, the mango, the avocado and the coriander leaves.
  8. Top with the burgers, the rest of the salsa and extra Tabasco, put the lids on and press down lightly.
