Black Pepper Chicken

Ingredients

Instructions

  1. Toss the chicken strips with 1 teaspoon black pepper and 1/4 teaspoon salt.
  2. Heat the neutral oil and sesame oil in a wok or large frying pan over high heat until hot, then add the chicken.
  3. Fry the chicken for 5 minutes, moving it around so the strips don't stick together, until lightly browned.
  4. Lower the heat to medium-high. Add the sliced onion, peppers, garlic and ginger.
  5. Fry for 3-4 minutes, stirring often with a spatula, until the vegetables just start to soften.
  6. Meanwhile, in a small jug, stir together the cornflour, dark soy sauce, oyster sauce and rice wine until the cornflour is fully mixed in.
  7. Add the chicken stock and the remaining 1 teaspoon black pepper, then stir to combine.
  8. Pour the sauce into the wok and stir. Heat for 1-2 minutes until it gently simmers. If too thick, add a splash of water. Turn off the heat.
  9. Serve with boiled rice and chopped spring onions.
