Instructions

  1. Preheat the oven to 350°F (175°C). Line three 8-inch cake pans with parchment and grease the sides with baking spray.
  2. Put the sugar in a large bowl, zest the two lemons into it and rub with your fingers until fragrant.
  3. Squeeze the lemons to get ½ cup of juice and add it to the bowl with the sour cream, eggs, melted butter, vanilla and salt. Whisk until smooth.
  4. In another bowl, combine the flour, baking soda, baking powder and salt, sift into the wet mixture and beat on low until just smooth.
  5. Divide the batter evenly among the three pans, weighing for accuracy if you can, and level the tops.
  6. Bake at 350°F (175°C) for 22 to 24 minutes, until a toothpick in the centre comes out clean. Cool the layers in the pans on a wire rack, then remove and cool completely.
  7. For the frosting, beat the softened cream cheese for 3 to 4 minutes until smooth. Add the lemon zest, vanilla, salt and powdered sugar and beat until creamy.
  8. Add the chilled cream and whisk for 5 to 6 minutes until stiff peaks form, starting slow and increasing speed. If too soft, chill the bowl for 30 minutes and whisk again.
  9. Swirl in 1/3 cup of seedless blackberry preserves with a spatula.
  10. Level the cake tops with a serrated knife and brush each layer with the 1/4 cup cream. Spread a few tablespoons of blackberry preserves on each layer.
  11. Spread about 2 cups of frosting on the first layer, press in fresh blackberries evenly, then top with a thin layer of frosting. Add the second layer and repeat, then invert the third layer on top.
  12. Coat the outside with a crumb coat of frosting, sealing the edges, then add the rest of the frosting and smooth it over the top and sides. Chill for 30 minutes.
  13. Garnish with more blackberries and edible flowers if desired. Chill for at least 4 hours or overnight until set. Store leftovers in the fridge for up to 3 days, covering the cut sides with food wrap.
