Blondies
Ingredients
- Butter125 g
- Brown sugar1 cup
- Egg1
- Vanilla1 tsp
- Flour1 cup
- Salt · flakes½ tsp
- Chocolate chip1 cup
- Walnut½ cups
Instructions
- Preheat the oven to 180°C/350°F (160°C fan-forced). Grease a 20 cm/8 inch square pan with butter and line it with baking paper.
- Spread the walnuts on a tray and roast for 5 minutes. Let them cool.
- Melt the butter in a light-coloured saucepan over medium-high heat, then lower to medium and simmer gently for 3-4 minutes, stirring now and then, until it smells nutty and has golden specks. Pour the butter and the golden bits into a bowl at once.
- Stir the sugar into the hot butter until combined. Let it cool for 3 minutes.
- Add the egg and vanilla and mix well. Add the flour and salt and mix until combined. The batter will be very thick.
- Fold in the white chocolate chips and walnuts.
- Spread the batter into the prepared pan and smooth the top.
- Bake for 25 minutes, until the edges are lightly golden and the top has a thin, crackly layer.
- Rest in the pan for 10 minutes, then lift onto a board and cool for at least another 10 minutes. Sprinkle with sea salt flakes if using, then cut into 16 squares or 9 large squares.
