- Flour2.08 cups
- Baking soda½ tsp
- Baking powder2 tsp
- Salt¼ tsp
- Sugar1 ¼ cups
- Egg2
- Buttermilk½ cups
- Oil⅔ cups
- Vanilla1 tsp
- Lemon
- Blueberry1 cup
- Butter3 tbsp
- Cinnamon½ tsp
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.

- In another bowl, whisk the eggs and sugar until pale and slightly frothy. Add the buttermilk, oil, vanilla and lemon zest, and mix well.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the blueberries carefully without overmixing.
- Divide the batter among the muffin cups, filling each about ¾ full.
- In a small bowl, combine the sugar, flour and cinnamon (if using). Rub in the cold butter with your fingertips until it looks like coarse crumbs, then scatter over the muffins.
- Bake for 20–25 minutes, until a toothpick inserted in the center comes out clean and the tops are golden. Cool in the pan for 5 minutes, then move to a wire rack to cool completely.
