Instructions
- Preheat the oven to 180°C. Grease and line a round baking dish or pie dish with baking paper.
- In a large bowl, combine the beef mince, curry powder, coriander, cumin, ½ tsp turmeric, salt, pepper, garlic, chutney, raisins and egg, mixing with a spatula without overworking.
- Whisk the remaining ½ tsp turmeric into the melted butter. Lay one phyllo sheet flat, brush it with the butter, place a second sheet on top and brush that too.
- Spoon about ⅓ of the filling along the bottom edge of the buttered sheets to form a long log. Roll loosely into a tube.
- Coil the filled tube into the baking dish starting from the centre. Repeat the sheet, filling and rolling steps two more times, adding each tube until the dish is full.
- Tuck a few bay leaves between the pastry layers and brush the top of the spiral with the remaining butter. Bake for 25 to 30 minutes, until golden brown and the filling is cooked through.
- Let the pie cool for a few minutes, then slice and serve with extra fruit chutney and a side salad.
