Boiled Gyoza Recipe (Sui Gyoza)
Ingredients
- Ground pork250 g
- Prawn100 g
- Choy sum⅔ cups
- Wonton wrapper30
- Cornstarch
- Ginger · grated½ tsp
- Salt½ tsp
- Soy sauce3 ½ tsp
- Sake½ tbsp
- Chive2 tbsp
- Sesame seed · grated roasted2 tsp
- Vinegar½ tbsp
- Sesame oil½ tsp
- Sugar¼ tsp
Instructions
- Put the pork mince, chopped prawns, chopped choy sum, grated ginger, salt, soy sauce, cooking sake, chopped garlic chives, grated roasted sesame seeds, sesame oil and sugar in a bowl and mix until sticky.
- Dust a baking tray with corn flour.
- Hold one wrapper on your palm, less-starchy side up. Wet the edge of half the wrapper with water.
- Put a lightly filled tablespoon of filling in the centre.
- Fold the wrapper in half over the filling, pinch the middle of the curved edge, and turn the arc upwards.
- Starting from the centre of the arc, pleat the right half with 4 folds, then pleat the left half towards the centre so both sides pleat inward.
- Repeat with the remaining wrappers.
- Bring a large pot of water, at least 4 cm deep, to the boil.
- Cook 10 gyoza at a time in the boiling water for 4 minutes, transferring each batch to a bowl or plate as it is cooked.
- Arrange the cooked gyoza on a serving plate, sprinkle a little of the hot cooking water over them so they do not stick, and serve hot with the soy-vinegar sauce, which is made by stirring the soy sauce, vinegar and sugar together until the sugar dissolves.
