Boxty Recipe (Irish Potato Pancakes)

Ingredients

Instructions

  1. Grate the peeled potatoes onto a large towel. Gather the towel ends and twist over the sink to squeeze out as much liquid as possible. Put the drained potatoes in a large bowl.
  2. Add the leftover mashed potatoes, flour, buttermilk, baking soda, salt and pepper to the bowl and mix until combined.
  3. If the batter is too thick, add more buttermilk; if too thin, add flour. It should be the consistency of soupy mashed potatoes.
  4. Melt the butter in a 10-inch cast iron skillet over medium-high heat.
  5. Pour in about 1½ to 2 cups of batter, spread it out and flatten it with a ladle, then lower the heat to medium.
  6. Cook for 4 to 5 minutes until golden brown, flip, and cook another 4 to 5 minutes until golden and cooked through.
  7. Remove from the pan, cut into triangles and serve; sliced green onions are optional.
