Ingredients
- Bok choy1
- Water or stock50 g
- Soy sauce30 g
- Garlic · crushed10 g
Instructions
- Rinse the bok choy and pat it dry. Cut it into 2 or 4 portions from the base, trimming the ends lightly so the leaves stay together.
- Heat a sautoir or Dutch oven over the stove. Add your fat (butter, oil or bacon grease) and let it melt or heat until sizzling.
- Place the bok choy in the pan cut side down and sear for about 3 minutes over medium-high heat. Move it around, flip it, and cook another 3 minutes.
- Flip the bok choy once more, add the stock and the crushed garlic or ginger, cover, and reduce the heat to medium-low. Braise for about 15 minutes until tender.
- Remove the lid, drizzle in the soy sauce, and keep cooking until most of the liquid has evaporated and the vegetables begin to caramelize.
- Optionally, add some juices or flavour from any meat roasting alongside to finish.
