๐ท Braised Pork: The Cantonese Way (่ฏไป็่ฑฌ่)
Ingredients
- Pork belly1 lb
- Potato2 lb
- Red onion3 oz
- Carrot3 oz
- Garlic3 cloves
- Scallion3 stalks
- Oil3 tsp
- Ground bean sauce1 tbsp
- Oyster sauce1 tbsp
- Soy sauce1 tbsp
- Sugar2 tsp
- Saltยฝ tsp
- Sesame oil1 tsp
Instructions
- Peel the potatoes, keep them in cold water, then rinse and cut into bite-sized triangular chunks. Peel and cut the carrots into triangular chunks. Cut the red onion into bite-sized pieces. Cut the garlic cloves into thirds. Cut the green parts of the green onions into 2-inch batons.
- Scrub the pork skin in cold water to remove debris and hair, pat dry, then cut into bite-sized pieces at least 1 inch thick.
- Heat a wok on high with oil. Stir-fry the red onion for about 30 seconds and set aside.
- Add more oil and stir-fry the potatoes for about 2 minutes until golden on the surface, then set aside. They will not be cooked through yet.
- Add more oil and the pork. Brown one side for 30 to 40 seconds, flip and brown the other side for 30 to 40 seconds.
- Add the garlic and stir-fry for about 20 seconds.
- Turn the heat to low or off, add the ground bean sauce, oyster sauce and light soy sauce and stir briefly.
- Return the heat to medium, add the sugar and stir to dissolve.
- Add the potatoes and carrots and stir for 30 seconds.
- Add enough boiling water to almost cover the ingredients, cover and cook for 5 minutes on medium-high heat.
- Uncover, taste and adjust seasoning (the creator's dad added 1/2 tsp salt), then stir, cover again and cook on medium heat for 3 to 4 minutes, adding small amounts of water if the liquid gets too low.
- Turn off the heat when a paring knife or chopstick pierces the potatoes easily. Stir in the red onion, green onion and sesame oil, then serve with the sauce.
