Bread Megamix | Jamie Oliver
Ingredients
- Bread flour1 kg
- Tepid water625 ml
- Yeast · dried3 x 7 g
- Sugar2 tbsp
- Salt1 tbsp
- Flour
Instructions
- Pile the flour on a clean surface and make a large well in the centre. Pour in half the water, then add the yeast, sugar and salt and stir with a fork.
- Gradually draw in flour from the inside walls of the well, keeping the walls intact, until the mix is stodgy and porridge-like. Add the remaining water, mix until stodgy again, then bring in all the flour, flouring your hands to pat it into a dough. Adjust water slightly if the flour needs it.
- Knead by pushing, folding, slapping and rolling for 4 to 5 minutes, until the dough is silky and elastic.
- Flour the top of the dough, put it in a bowl, cover with cling film and prove for about 30 minutes, until doubled in size, somewhere warm, moist and draught-free.
- Knock the air out of the dough by bashing and squashing it for 30 seconds. Shape or flavour as you like, place it to prove a second time for 30 minutes to 1 hour, until doubled again.
- Preheat the oven to 180°C/350°F/gas 4. Gently place the dough on a flour-dusted baking tray and put it in the oven without slamming the door. Bake for 25 to 30 minutes, until golden brown and hollow-sounding when tapped on the bottom; if not hollow, bake a little longer.
- Cool on a rack for at least 30 minutes before serving. Freeze any leftover bread.
