Ingredients

Instructions

  1. Toast the bread slices in a pan until crisp on both sides, let cool completely, then cut into small cubes and set aside.
  2. Fry the cashews or peanuts in the oil over medium heat until golden and crunchy, then set aside with the bread.
  3. Add the mustard seeds and urad dal, if using, and sauté until the dal turns lightly golden.
  4. Add the green chili and curry leaves and sauté until the leaves turn crisp.
  5. Sprinkle in the asafoetida, add the onion and sauté until golden. Add the ginger paste and sauté for 30 seconds.
  6. Add the tomatoes, salt (start with 1/4 teaspoon, since the bread is salted) and turmeric. Sauté until the tomatoes are soft and mushy.
  7. Add the red chili powder and sugar, if using, and sauté for 1-2 minutes until the raw smell goes away.
  8. Pour in 3-4 tablespoons of water and stir.
  9. Cook until the mixture thickens. Taste and adjust the salt if needed.
  10. Add the bread cubes and cashews and mix gently so the bread is coated in the onion-tomato masala.
  11. Sprinkle with coriander leaves and serve hot, with a squeeze of lemon juice.
