Breaded Pork Chops Recipe
Ingredients
- Pork chop · boneless sliced450 g
- Soy sauce1 tbsp
- Paprika1 ½ tsp
- Salt1 ½ tsp
- Sugar1 tsp
- Garlic powder1 tsp
- Ginger powder½ tsp
- Buttermilk½ cups
- Flour3 tbsp + 1 ½ cups
- White pepper1 tsp
- Baking powder1 tbsp
- Oil2–3 cups
- Worcestershire sauce1
Instructions
- Cut small slits into the thin fat around the edges of the pork slices so they don't curl or bulge when cooking. Chicken breast can be used instead.
- Hit both sides of the meat with the back of a knife or a tenderizer until the surface is rough.
- Marinate the pork in soy sauce, paprika, 1 tsp salt, sugar, garlic powder, ginger powder and buttermilk, and refrigerate for at least 2 hours or until most of the buttermilk is absorbed.
- Toss the marinated pork with 3 tbsp all-purpose flour until thoroughly coated.
- Mix 1.5 cups flour with ½ tsp salt, white pepper and baking powder. Slowly drizzle in 2 to 3 tbsp water and stir to form tiny lumps, then rub them between your hands until the lumps are even and fine.
- Using a fork, transfer a piece of pork into the flour mixture, press it firmly, and shake off the excess. Set it on a rack and repeat with the rest.
- Rest the breaded pork for 15 minutes on a rack, not a flat board, so the coating sets.
- Heat 2 to 3 cups of oil to 360°F. Deep fry the pork over medium heat for 8 to 10 minutes, until the internal temperature reaches 145°F (63°C).
- Serve with Worcestershire sauce for dipping and white rice.
